Ingredients

  • 1 lb (450 g) rotini or fusilli pasta
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, halved
  • 1 cup crumbled feta
  • 1/2 cup fresh parsley, chopped
  • Dressing: 1/3 cup olive oil, 3 tbsp lemon juice, 2 tbsp red wine vinegar, 1 tsp oregano, 1 clove garlic minced, salt and pepper

Instructions

  1. Step 1. Cook the pasta in salted water until al dente. Drain and rinse under cool water, then drain well.
